
yesterday warmer temps arrived. these last 2 days we have welcomed opening up and airing out. our spring flowers finally opened. the air even smells different. it is very good. i instantly felt the pull of outdoor eating and cooking. i wanted to whip out the grill, buy fresh veggies and feast! so i made this dressing, my "go to" in the summertime. it is sweet and tangy and so very fresh. it goes great on greens, especially spinach leaves, but it is also fabulous on chicken and pork! so a meal it was. i made the dressing first so it could sit and marinate. i then sauteed thin pork chops, cooked some baked potatoes, and trimmed fresh spinach for a salad. served them all up, then poured generous amounts of the dressing on my spinach leaves and pork! yummmmm. i highly recommend this. you can keep the leftover dressing in the fridge for days. i plan on having it with my lunches this week. i think it gets even better with time, melding the flavors even more. not only does it taste great it look so darn pretty too!
aunt judy's summertime dressing:
- 1/3 C ketchup
- 1/4 C cider vinegar
- 1/2 C sugar
- 1 C vegetable oil
- 1 medium red onion chopped
- 2 TBS worcestershire sauce
combine all ingredients
*best if refrigerated overnight (but not necessary)
great on spinach salad, chicken or pork
