my "go to"


yesterday warmer temps arrived. these last 2 days we have welcomed  opening up and airing out.  our spring flowers finally opened.  the air even smells different.  it is very good.  i instantly felt the pull of outdoor eating and cooking.  i wanted to whip out the grill, buy fresh veggies and feast!  so i made this dressing,  my "go to" in the summertime.  it is sweet and tangy and so very fresh.  it goes great on greens, especially spinach leaves, but it is also fabulous on chicken and pork!  so a meal it was. i made the dressing first so it could sit and marinate.  i then sauteed thin pork chops, cooked some baked potatoes, and trimmed fresh spinach for a salad.  served them all up,  then poured generous amounts of the dressing on my spinach leaves and pork!  yummmmm.  i highly recommend this.  you can keep the leftover dressing in the fridge for days.  i plan on having it with my lunches this week.  i think it gets even better with time, melding the flavors even more.  not only does it taste great it look so darn pretty too!  

aunt judy's summertime dressing:
  • 1/3  C  ketchup
  • 1/4  C  cider vinegar
  • 1/2  C  sugar
  • 1  C  vegetable oil
  • 1  medium red onion chopped
  • 2  TBS  worcestershire sauce

combine all ingredients
*best if refrigerated overnight (but not necessary)
great on spinach salad, chicken or pork

Mmmm, Mmmmm, Mmmmm! I'm off to check and see if I have the ingredients to make this today!

Let's see....my 'go to' marinade is: 1/2 cup soy sauce, 1/2 cup honey, juice from a lemon. Microwave together, then pour over pork, chicken...I even like it on fish.

But my piece de resistance, the thing that lasts for all of summer and keeps getting better the more you eat it....I'll blog that recipe and link back here!

A have a spring "go to" breakfast that we eat almost every day...

1 bunch fresh asparagus, steamed
5 eggs (3 for him and 2 for me), sunny side up, with yolks nice and "dippy"

Serve asparagus over eggs. We like duck eggs the best, and often have this with a side of cultured cabbage or some other salty cultured vegetable.

Mmmmmmmmmmmmmmmmmmmmmmmmmmmm.

My fave "go to" dressing is a puree of a few avocados, some plain yogurt, garlic, lemon juice, sea salt, and maybe even some cilantro mixed in if I have it. We love it on anything from salad greens to pieces of millet (cut like corn bread).

mmmm these all sound good ladies! i LOVe "dippy" eggs alas i am the only one in my house that eats them that way!

yummmmy!! sounds along the lines of a russian style dressing so it would be good on roast beef sandwiches too! my go to is a package of good seasoning then use raspberry vinegar (or balsamic) and great olive oil. then I mash up raspberries or strawberries in the dressing. I love it over a grilled chicken salad.

that's a whole lot of sugar - but sounds really good!

my go to dressing is lemon+dill+garlic+olive oil. the recipe's on my sidebar. it is soooo good - i sometimes lick the plate when the lettuce is gone.

sounds delicious! my super simple absolute fave dressing is inspired by this great puerto rican restaurant near us...

lots of finely minced garlic
lemon juice & white wine vinegar
sea salt
and the lightest possible oil you can find (even vegie oil from the cupboard if you want)

I just mix it all together to taste and YUM with any kind of food :)
